Joey Giannuzzi, chef and owner of the Green Gourmet, and Robert Greenfield, owner of Greenfield's, sure can! They have partnered to add yet another "Green" restaurant to their résumés.
Located at Greenfield's (5199 W. Atlantic Ave.) "Doing It Green" (set to open on June 15) will feature an entirely organic, steroid-/pesticide-/hormone-/chemical-free menu. DIG will be Delray's first sit-down, full-service restaurant that is entirely dedicated to skimping on the carbon footprint but never on the flavor.
Even the interior of the restaurant will carry out their green vision: reclaimed wood tables and chairs, floor-to-ceiling windows on three walls (to show diners exactly where the produce their eating came from -- DIG's own organic garden), a polished concrete floor, and art by local artists. Even all the restaurant's used paper, plastic, and glass will be recycled, and all the leftover food will be composted and put back into the garden.
To Giannuzzi and Greenfield, serving healthy organic food is not some hip new trend -- it is a way of life. They have managed to come up with different ways to make eating healthy a little more fun, like a ten-foot-long salad bar in the middle of the restaurant, customized organic hummus (made tableside), organic juice and smoothie bar (which includes "Adult" smoothies made with organic liquor), 100 percent organic soda, and different flavor-infused water daily. There really is nothing these guys haven't thought of.
DIG will be open from 11 a.m. to 11 p.m. Sunday through Thursday and 11 a.m. to 2 a.m. on Friday and Saturday. For more information or to make reservations, call 561-638-0500.
