Forget Munchkins, Try 'Krunkins' Vegan Donut Holes from PAC Pastries

Croissant-donut hybrids are so five minutes ago. Meet the "krunkin", Broward County's next dessert craze. The sweet treat is a vegan donut incarnation whipped up by Shelbey Ganzel, owner of PAC Pastries.

The name was invented by Green Bar and Kitchen, a purveyor of PAC's treats. And donuts ain't all Ganzel does. She's a master of organic, vegan, gluten-free refreshments, from cupcakes to cinnamon rolls to chocolate chip cookies.

PAC's cupcakes come in flavors like PB&J, birthday cake and key lime, and Ganzel is always into dessert experiments. She's done tiramisu donuts, waffles, raw/sugar-free desserts like cashew butter cups and all kinds of other stuff.

Ganzel launched the business a year and a half ago, and the truck back in August.

"I was working for a coffee shop and I happened to bring in some baked goods for my co-workers. The owner tried them and loved them and basically gave me two options - I can pay you to make these for us or I can help you start a business and I'll buy them for you," she recalls. It was an offer she couldn't refuse. She also praises her mom and the owner of BC Taco truck for helping her along the way.

"My family is extremely supportive. They're always bending over backwards to do whatever they can to help me and make the business a little easier for me."

Ganzel says everything is baked fresh on the truck, so if you spot PAC at an event, you're getting stuff straight-from-the-oven. Oh, and they're pretty generous with the samples. You can also find her goodies at Green Bar and Kitchen and Tunie's market in Palm Beach Gardens. Or, you can order from her directly -- she even does wedding cakes (plus, they deliver).

As far as Ganzel's secret, it's all in the flour, she tells Clean Plate Charlie. She whipped up a hush-hush gluten-free flour mix that works wonders in her concoctions.

"I want everybody to be able to eat it, no matter what special diet they're on," she says.

PAC's truck makes appearances in Martin, Palm Beach and Broward Counties, and they're starting to hit Miami-Dade, too, Ganzel says.

Doughnut holes are $15 for a dozen.
