As a countdown to the upcoming New Times Cupcake Battle at the 2011 Las Olas Wine & Food Festival on April 29, Clean Plate Charlie interviewed owners of the participating bakeries.

We emailed Roberta Phillips, owner of CloudNine Cupcakes, a delivery-based bakery bringing cupcakes to Broward, Palm Beach, and Miami-Dade counties. The bakery has even sold cupcakes to Tom Cruise! Learn more about her plan to win the upcoming cupcake battle...

Clean Plate Charlie: How did the bakery get started?

Roberta Phillips of CloudNine Cupcakes: CloudNine Cupcakes is a dream come true. It started when I began baking cupcakes for friends and colleagues back when I used to work in the architecture field years ago. It officially became a business in 2010. Since then, I'm glad to say that it has been a huge success. We've even had orders from Tom Cruise!!! Yes, the person who had us all at HELLO!!

What is your signature cupcake or customer favorite cupcake?

Our signature cupcake is called Cloud9. It's a vanilla cupcake filled with dulce de leche, topped with meringue frosting and drizzled with caramel.

After you have it, it makes you hum to "Nothing Compares 2U" by Sinead O'Connor.

Will the signature cupcake be used for the cupcake battle?

It will be a surprise, surprise.

What's your game plan for the cupcake battle?

Our game plan? Yes, to take you to a place you never been before... HEAVEN. And I am sure, you will not want to come back down.

Why do you think your bakery will win the battle; what sets your store apart?

Besides making everything with fresh ingredients, we also use organic ingredients. This alone gives our cupcakes great quality, not to mention that they really, really taste unbelievable. Oh, did we mention presentation? OK, don't get us started.
