There are many incarnations of battered and fried onion goodness to be had: the traditional onion ring, onion petals, even those little onion crunchies we like to put on casseroles and pretend they're still healthful. Now, everyone's favorite fried Allium comes in "brick" formation from newly-opened Bristol's Burgers in Hollywood.

It's a signature dish featured on the menu at one of two new restaurants launching at Diplomat Landing, a unique waterfront dining area connected to the Curio Collection from Hilton by a covered pedestrian walkway.

Now open, Bristol's Burgers is what concept creator Howard Wein, founder of Howard Wein Hospitality, says is the first step in what he believes will be a "dining and drinking evolution in Hollywood."

Everything at Bristol's is familiar, but not. The onions are bricks and the burgers are ovals. 

"We’ve taken the classic burger joint and made it the best it can be," says Wein. "We have our own blend of beef for our burgers and make everything else in-house from our [Cheez Whiz-like sauce] to the fresh-baked sub rolls — plus all the ice cream for each of our milkshakes."

The Bristol's Burgers menu will highlight five signature burgers including the house cheeseburger with melted cheddar, house-made pickles, and Louis dressing. The Porter Barbeque Burger comes with griddled onions, Monterey jack, and porter barbecue sauce. Other modern twists include a vegan quinoa burger and the option to request a fresh-baked gluten-free roll for any burger.

Wein is so confident with his concept, he's willing to venture that it's the "best burger you'll ever taste."
Other highlights from the Bristol's menu include a varied selection of wedge salads, chicken wings, an onion "brick" served with grilled lemons and horseradish sauce, and mini Chicago-style hot dogs also served on house-baked buns.

The bar at Bristol’s Burgers highlights similar in-house creations, including a selection of boozy (and non-boozy) milkshakes made with homemade ice cream. Flavors include the very adult Southern Belle, a frosty blend of vanilla ice cream, caramel, and bourbon, or the kid-friendly Lunch Box with vanilla ice cream, grape jelly, and peanut butter cups.

A full bar offers a wide selection of retro-inspired cocktails like the Bristol's Iced Tea and Build a Mule, or Lemon Drop and Sex on the Beach shots, among others. 

Next up to launch at the Landing is Portico, a rustic outdoor beer and wine garden with offerings exclusively on tap served alongside light Italian fare. Opening later in June, the establishment will be just steps away from the Diplomat Landing marina, where, in addition to gazing at the resident yachts, guests can entertain themselves with outdoor games like ping pong, corn hole, and ring toss.

An assortment of small plates includes fried green beans, roasted cauliflower, and a kale-avocado salad served alongside charcuterie and specialty cheese boards. Six signature pizzas will include roasted tomato and mozzarella, arugula, speck and parmesan, and the Bianca Gorgonzola.

The grazing-style menu is designed to pair with any of the 20 tap beverages, all served in seven ounce glasses. Old and new world wines, local craft beers, and even the house signature Americano cocktail will all be available on tap.

"We've made sure that every ingredient we use is the best possible because we know it makes a difference when taking that first bite," says Wein.
