No. 21: Nobu Snapper From Sushi Simon
A Sushi Simon in Boynton Beach, fresh mutton snapper arrives on your table just hours
after being plucked from the waters nearby. It's sliced usuzukuri-style
-- into ultra thin ribbons of sashimi -- and rainbowed around the plate
like an exotic flower. Stopping there would be fine, but Sushi Simon's
chefs take it a step further, adding scallion and cilantro, wispy-thin
beets, and a pungently tangy ponzu sauce.
