At Angus Bar and Grill, the successor to the longstanding Beef Eater Steak House on Hollywood Boulevard, the best cuts are the cheapest. Particularly, the vacio steak -- a not-too-fatty-not-too-lean-but-totally-mouth-wateringly-tender slab of beef hailing from the flank and clocking in at just $11.95.
What's the secret to this cheap but deeply beef cut? Vacio, while immensely popular in South America, doesn't get much attention in American steakhouses. But penny for penny, pound for pound, I'd put a well-grilled vacio up against all but the finest of rib eyes. That Angus' vacio is perfectly executed is the icing on the cake. It's over an inch thick of well-articulated musculature, charred with the lick of the grill and ruby red inside. Smear it with some fab homemade chimichurri and drag it through a pool of its own juices, and you'll be in beefy Valhalla.
