It starts with seasoned steak -- cumin, salt, pepper. A hot pan, oil, and flame. Add onions, peppers, and cilantro, and as if by magic, you have lomo saltado: steak sauteed Peruvian style. At Bravo Gourmet Sandwich Shop in Wilton Manors, the lomo saltado ends up not on the plate, but stuffed into a thick, flaky bun and made portable as a sandwich. Watch as we go behind the line
and check out the inner workings of Bravo, from those great lomo saltado sandwiches to stuffed pork loin, killer empanadas, and frosty shakes made with lucuma.
