Behind the Line at Bravo Gourmet Sandwich Shop

It starts with seasoned steak -- cumin, salt, pepper. A hot pan, oil, and flame. Add onions, peppers, and cilantro, and as if by magic, you have lomo saltado: steak sauteed Peruvian style. At Bravo Gourmet Sandwich Shop in Wilton Manors, the lomo saltado ends up not on the plate, but stuffed into a thick, flaky bun and made portable as a sandwich.
