Drop into Michael's Kitchen (433 E. Sheridan St., Dania Beach, 954-926-5556), and there's no doubt who wears the apron in the restaurant -- chef-proprietor Michael Blum. A graduate of the Culinary Institute of America, Blum has shunned the high-profile kitchens of other chefs in order to make his own name, and he's succeeding one lunch at a time. (The restaurant is not open for dinner.) Specials change daily, but they might include goodies such as tomato-basil angel hair, a "collapsed" whole chicken that's been deboned, roasted vegetable-and-turkey dumplings, or roasted pork loin. No matter how filling the main course may be, don't turn your back on desserts. Blum's touch with them is just as sweet.
