As a countdown to the upcoming New Times Cupcake Battle at the 2011 Las Olas Wine & Food Festival on April 29, Clean Plate Charlie interviewed owners of the participating bakeries.

We emailed Candice Christopher, owner of Candy's Cake Pops who claims to be one of the largest Cake Pop online retailers in the country with over 20 flavors. What's a cake pop? Candice explains...

Clean Plate Charlie: How did your business get started?



Candice Christopher of Candy's Cake Pops: I was working for a hedge fund and after bringing in some of my homemade desserts on a regular basis I started to become more known for my desserts than my office work. When you start being called "cupcake" as opposed to your first name, it's time to make a career change. I figured why not give it a shot. I was a pioneer in the Cake Pop confectionary business so I decided to put my money where my mouth is (literally and figuratively). I now own and run one of the largest Cake Pop online retailers in the country. My Cake Pops are sophisticated, modern and trendy. We work with some of the higher-end hotels and restaurants across the country and I wouldn't want it any other way. We're not a typical Mom-and-Pop shop, we're an edgy label to be reckoned with.



What is your signature cupcake or customer favorite cupcake?



Cake Pops are essentially cupcakes rolled into golf ball sized balls, dipped in chocolate and placed on a stick. It's less of a mess and perfect for all occasions. Red Velvet is a fan-favorite but it's hard not to like all the flavors like Pumpkin, Cookies and Cream, and Chocolate. I think the secret to happiness is variety and that's why I continue to create different Cake Pop flavors (I've perfected over 20 flavors)!

You bet it is! I'm here to win!

Why do you think your bakery will win the battle; what sets your store apart?
 

It's not just about taste it's also about the showmanship. The taste is amazing and I believe the judges will love the recipes but the style really separates Candy's Cake Pops. What dessert can you eat that is sophisticated and modern while portable and mess-free?
