As a countdown to the upcoming New Times Cupcake Battle at the 2011 Las Olas Wine & Food Festival April 29, Clean Plate Charlie interviewed owners of the participating bakeries.
First we spoke to Simon Bai owner of Allegria Frozen Yogurt & Cupcakes who plans to win the judges and crowd over with simple cupcakes that "pack a powerful flavor punch." Allegria means happiness in Italian, and the bakery promises its cupcakes will bring just that.

What is your signature cupcake or customer favorite?
The customer favorite is the Red Velvet cupcake. It's a very moist and rich red velvet cake with a well balanced cream cheese frosting; simple yet perfect!
Will the signature cupcake be used for the cupcake battle?
The Red Velvet cupcake will be used for the sampling, however, our cupcake chefs are coming up with an equally simple but delicious cupcake for the battle.
What's your game plan for the cupcake battle?
Our goal at Allegria is to strive for moist, well balanced, and delicious cupcakes that aren't too fancy. Our cupcakes will bring the simplicity of cupcake but pack a powerful flavor punch!
