No. 19: Cracked Conch From Sheila’s Famous BBQ, Conch and More
Sheila’s Famous BBQ, Conch and More in Lake Worth is little more than a tiny, yellow kitchen with outdoor seating. But when you drive up, the joint smells like hickory heaven.
Out back behind the patio with tiled stone tables and a single radio
playing calypso music is a heavy barrel smoker, and good times emanate
from within. In the kitchen, Sheila’s staff prepares Bahamian-style
seafood to pair with the ‘cue, and none of it is finer than the cracked
conch. These odd collection of mismatched strips are battered and
gently fried, so that the coating becomes crisp while the meat barely
cooks to a tender bite. Like fried calamari but somehow far greater,
these bits of conch are succulent and moist, and begged to be squirted
with lime and dipped in the cup of yellow mustard sauce adjacent. It’s
hard to decide which is better: the barbecue or the conch. Luckily at
Sheila’s, you can have both.
