The Hyatt Regency Miami, which underwent a $20 million dollar renovation last year, has unveiled its’ new Pure Verde

restaurant. Executive chef Michael Morris will be in charge of the

snazzily-designed venue, which just months ago was a dull, aging sports

bar. Morris, who previously helmed Hyatt properties in Tampa Bay, Key

West and Coral Gables, describes his cuisine as “Old World beginnings

with Florida, Latin and Caribbean aromas”. The name Pure Verde is a

thematic reminder of the hotel having earned Green Lodging

Certification this past summer. We’ll find out soon enough whether the

food is also pure, green, and sustainable.
