No. 44: Daeji Bulgogi from Gabose Korean Restaurant
The fiery, thin-sliced pork known as daeji bulgogi arrives on a sizzling platter at Gabose Korean Restaurant in Lauderhill, like some Korean version of fajitas.
The dish has the same level of DIY interaction as well. To eat it, you
take pieces of the brick-red pork, marinated in spicy fermented chile
paste, and wedge them into crisp lettuce leaves. How you dress it from
there is up to you: Add rice, kimchi, sprouts, or a host of fresh-made
panchan (condiments and pickled vegetables presented with evey meal).
Or, if you dare, glob on more chili paste. Either way, you get the heat
and richness of the meat against the cool crunch of the lettuce, and a
meal custom-tailored to you. Add an ice-cold Hite lager and the picture
is complete.
