No. 75: Stuffed Poblano From Canyon
Just about every Mexican restaurant in South Florida does a version of chile releno, a poblano pepper stuffed with cheese, coated in batter, and fried. But Canyon's upscale take on the releno, oozing with melted goat cheese, elevates it from goopy, cheesy mess to fine Mexican eating. With a crackly blue cornmeal crust and smoky salsa, the roasted pepper is indulgent and refined. It also pairs great with Canyon's own prickly pear margarita.
