No. 35: Tacos al Pastor from Taqueria Dona Raquel
There's something awe-inspiring about meat roasting on a spit; the hiss and pop of fat
as the flames lick the side. That's the draw of al pastor, a
chili-marinated hunk of pork cooked on a rotating spindle, not unlike
shawarma. At Taqueria Dona Raquel, an authentic Mexican restaurant in
Pompano Beach, the al pastor is shaved from a thick log of pork
dripping with spices and the sweet scent of pineapple. The pieces are
layered into two pliant corn tortillas made at the restaurant's
adjoining market and sprinkled with cilantro, onion, and a few long
slices of pineapple. Sprinkled with lime juice and dashed with the
Taqueria's spicy tomatillo salsa, the al pastor is taco perfection.
