For the past two days, we've given you a little insight into the world of Chef Carlos Fernandez of Hi-Life Cafe in Wilton Manors and Top Chef fame. Today, he's sharing with us the recipe for his popular Coca-Cola Cake. Enjoy!
Coca-Cola Cake
Ingredients for cake:
2 cups flour
2 cups sugar
2 sticks butter
1 cup Coca-Cola
3 tbsp cocoa
2 beaten eggs
1/2 cup buttermilk
1 tsp baking soda
1 tsp pure vanilla extract
2 cups mini marshmallows
Ingredients for icing:
1 box powdered sugar
3 tbsp cocoa
1 stick melted butter
8 tbsp cocoa
1 tsp vanilla extract
1 cup chopped and toasted pecans.
Preheat oven to 350 degrees. Using a spoon, blend the flour and sugar in a large bowl and set aside.
In
a skillet, melt the butter and add the Coca-Cola and cocoa, stirring
regularly. Remove from heat and blend into the flour mixture. Slowly
add in the eggs, buttermilk, baking soda, vanilla extract, and mini
marshmallows, making sure you blend after you add each component so the batter does not get lumpy.
Pour the batter into a greased 8x13 pyrex cake pan and bake for 30-35 minutes until set in the middle.
Make
the icing by blending all the ingredients using an electric mixer. Make sure the icing is smooth and there are no lumps. While the cake
is still warm, ice the cake. Let it sit for one hour before serving.
Yields 12 large slices.
