Last week we introduced you to freekeh, and now we're gonna tell you what to do with it, according to the chef/owner at Hawa Fusion in Miami.
This dish -- Freekeh with Wild Mushrooms -- is sinfully delish.
Freekeh with Wild Mushrooms
Serves 2
1 ½ cups freekeh, cooked
2 Tbs. shallots, diced
¼ Tbs. extra virgin olive oil
½ cup fresh shiitake mushrooms, sliced
3/8 cup heavy cream
salt, to taste
Directions:
Warm oil in a skillet and add shallots. Saute until shallots are soft,
about one minute or less. Add mushrooms and ¼ cup heavy cream. Sprinkle
lightly with salt. Reduce for about three minutes. Add another 1/8 cup
cream and mix in freekeh. Serve alone or garnish with a few slices of
meat or chicken.
