It's almost time for the big day and Clean Plate Charlie is getting the cooler and the portable barbeque ready for some epic tailgate action.... before the Jimmy Buffett concert tomorrow, February 2 at BB&T Center in Sunrise.
By the way, if you're a football tailgater and you think you've got it going on -- get thee to a parrothead parking lot party and really see some wild action!
Pirate ships, tiki bars set up complete with whirling blenders filled with potent potables, and barbeques are fired as people dress in hula skirts, Hawaiian shirts, and parrot costumes dance and make merry -- and that's before the concert even starts!
If you're planning on joining the tailgate, we've got a few essentials to bring -- based on the master's songs, naturally.
Just don't forget the lime, shaker, and salt and if you have any questions at all -- just think: WWJBD (What would Jimmy Buffett do)?
Last Mango in Paris -- Mango and Brie Quesadillas
Take Jimmy's song literally with the delicious snack that's completely easy to make either at home or on the grill. Spray nonstick coating on one side of an eight-inch flour tortilla and heat until slightly browned. Then add strips of brie, fresh mango (make sure the mango is dried with a paper towel), cilantro and salt and cover with another tortilla. Allow to cook for two minutes, then flip, and cook for about another minute while pressing down on the tortilla. Cut into wedges and serve with sour cream.
Fins - LandShark Beer
Jimmy Buffett song meets Jimmy Buffett beer in this perfect marriage. Normally, we'd be all about the small batch craft beer or the import made by monks, but not today. Today, we're drinking LandShark Lager, brewed in beautiful Jacksonville, Florida. We like to kick it up a notch with a few drops of Tabasco, s pinch of salt, and a wedge of lime.
Remember to keep your fins up and drink responsibly!
Cheeseburger in Paradise - Cheeseburger in Paradise
An absolute must is to savor a juicy cheeseburger while in Paradise. Break out the grill and get going. What to put on your sandwich? "I like mine with lettuce and tomato, Heinz 57 and French fried potatoes...big kosher pickle and a cold draft beer...."
Boat Drinks - Boat Drinks
Basically tiki drinks, Jimmy Buffett coined the term "boat drinks" and the term has stuck. Though many think instantly of frothy blender concoctions, you can just as easily make a delicious drink without the electric appliances. Here's a recipe for Planter's Punch that's easy to make from the trunk of a car:
Planter's Punch
Ingredients:
3 ounces dark Jamaican rum
1 ounce lime juice
1/2 ounce lemon juice
1/2 ounce grenadine
1/4 teaspoon superfine sugar
Dash Angostura bitters
Stir all ingredients together and strain into tall glass filled with cracked ice. Garnish with cherry and orange wheel.
Margaritaville - Margaritas
Jimmy Buffett sings and we obey. We love Margaritas...when they're made fresh. On this one trust us and not cousin Jimmy and throw out the mix! Instead, make a fresh Margarita using only three ingredients:

Ingredients:
2 parts Milagro Silver tequila
3/4 parts agave nectar
1 part fresh lime juice
Combine ingredients in a Boston Shaker and shake with ice. Strain into an ice filled rocks glass (salt rim optional).
